Meet the pastry chef Executive Pastry Chef, Melissa “Birdie” Black is also a 4th generation poultry farmer. She moved to Senoia in March 2022 when her husband (and farmhand) was transfered from Indianapolis where she was born and raised in her Scotch-Irish grandmother’s home and commercial kitchen next to the Indianapolis Farmer’s Market. Her earliest memories are of being propped up on the kitchen counter watching her grandmother peel hundreds of pounds of potatoes by hand daily for her famous Irish stew. She witnessed the sweat, tears, and endless love poured into everything created with fresh ingredients from the market right outside the kitchen door. Her first job was rolling silverware as her mom waitressed in the family’s restaurant and pub. She would often accompany her grandmother on trips home to Glasgow, Kentucky to her aunt’s farm where they grew tobacco, sweet potatoes, cherries in the rich red clay and raised chickens. Birdie loved picking cherries with her many cousins and collecting eggs for her aunt. Birdie went to summer school in LeMans, France during high school and traveled Northern France experiencing authentic French pastries and soaked in everything she could from her French host mother’s kitchen and daily trips to the Boulangerie with her host father. After college, she worked in accounting and sales for an IT company before ending up in banking where she moved up the ladder from bank teller to a legal analyst. In 2010, Birdie modified her work schedule and begin catering for the masses on the weekends. By 2011, her health began to decline after a surgery left her with relying on a feeding tube and having an improper diagnosis. She was forced to retire early in 2012 and continued to fight medical hurdles. Birdie had decided to switch to palliative care when her husband was transferred and found wonderful medical specialists and hospice care here in Coweta and Fayette Counties. She is currently undergoing chemotherapy for lupus and is experiencing the joy of baking again. When not creating edible art, Birdie breeds heritage and rare breed chickens, ducks, turkeys and quail and enters Poultry Shows as a member of the Chatthoochee Valley Poultry Club. Although having hearing loss, she enjoys every opportunity of singing with the Worship band at her church and serving the community. She is also a volunteer baker for Icing Smiles, a non-profit that provides cakes and decorated cookies to terminal children and their siblings. Following her grandmother’s legacy over 500 miles away making her clients feel seen, heard, and loved is her mission. “I’d Love to Bake You Happy!”
So many to choose from… Although it can be overwhelming to decide, know that you don’t have to settle for a basic vanilla cake or cookies. However, my vanilla creations are anything but basic. I procure Organic Madagascar Vanilla Bean Pods which are cured using the Bourbon method and create my own vanilla bean extract. I use fruit from my own garden and local farms to create pastries using homemade flavor emulsions as much as possible. And, of course, I use my own farm fresh eggs from my well-loved flock. Variety is the spice of life, so why not try something a little different that tickles the tastebuds? Flavor Favorites for cookies & cakes Flavor Favorites for cookies & cakes
